Well, as usual I am expecting a gain tonight. I did 40 minutes on the bike and a 42 minute kickboxing class last night to try and undue some of my weekend Christmas partying! I will see tonight, but what ever happens is ok with me. This time of year I am just trying to maintain! Actually I have decided to borrow Paulene's goal for the holiday season. To be within 1 kg of my pre-Christmas weight when I weigh in on January 3rd. I will not be weighing in on Dec 27 because I will be at my in-laws from the 27 until the first. Although, we will return on Dec 30 because my awesome boss has purchased a set of box seat tickets at an NHL game in the city and he has invited Trevor and I. We will then go back to my in-laws for New Years Eve. My husbands family goes for Chinese buffet every New Year's and because we spend Christmas Eve with my family the last few years we have spent New Year's Eve drinking and watching movies with my mother and father in law! So I am thinking that staying within 1 kg, which is 2.206 lbs but 1 kg sounds much better, will be doable if I am careful when I can be and then indulge some when I need to. But like Paulene said, I am human and this plan could go all to hell, but it is good to have an achievable plan to stick to.
Tonight at weight watchers we are having a potluck dinner and I made this: (also found on my recipes page)
Bake 'N Serve Fruit Cake
From: Splenda.ca
1 1/2 cups (375 mL) chopped candied fruit
1/2 cup (125 mL) raisins
1/4 cup (50 mL) rum or cold coffee
1 1/4 cups (300 mL) all purpose flour
3/4 cup (175 mL) SPLENDA Granular
2 tsp (10 mL) baking powder
1 1/2 tsp (7 mL) cinnamon
1/2 tsp (2 mL) nutmeg
1/2 tsp (2 mL) allspice
1/2 tsp (2 mL) salt
2 eggs
1/2 cup (125 mL) unsweetened applesauce
1/4 cup (50 mL) vegetable oil
1/2 cup (125 mL) coarsely chopped nuts (pecans, walnuts, filberts)
Combine candied fruit, raisins, and rum or cold coffee. Let stand 30 minutes or until most of the liquid is absorbed.
Mix flour, SPLENDA*, baking powder, cinnamon, nutmeg, allspice and salt; set aside. Whisk together eggs, applesauce and oil until smooth. Stir in fruit mixture, flour mixture and nuts until blended. Spread evenly in greased 8" x 4" (22 x 11 cm/1.5 L) loaf pan.
Bake at 350ºF (180ºC) for 45-50 minutes or until a tester inserted in centre comes out clean. Cool in pan for 10 minutes. Remove from pan and cool on rack. Wrap well and refrigerate.

It is delicious! Although, I found myself nibbling on the chopped candied fruit while I was cooking. Bad girl Wendy! I bought the deluxe kind with mango, pineapple and cherries because I hate orange peel. Yuck! I had about 3 tbsp of the stuff and then thought "what the heck am I doing?" It is amazing how fast old habits return! Also while I was at my moms I tasted the recipe she is brining tonight from the Splenda.ca site: Banana Chip Bars which you can find on my recipes page. It is like banana loaf with chocolate chips in it…. Yum! It should be fun! WE all have to bring the recipe for what ever we make, so I will be sure post them on here! My plan tonight is to have a good time and try a little of everything. It is the perfect opportunity to try new low fat dishes with out making them all first! As far as I know this will be the last temptation until next Thursday when my mother and Aunt and I go for out twice a yeartrip to Pizza Hut Buffet and then that will be it till Christmas.
